The Nirey Professional Electric Knife Sharpener is a totally new concept in professional knife sharpening, featuring a patented cushion contact system. This system not only produces edges sharper than when the knife was new, but also creates a polished finish – eliminating the need for honing unlike hard stone or carbide wheel sharpeners. The cushion contact system contours to the knife edge and doesn't create "hot spots" which soften the steel and create weak points & bluing (ruining your knife) like the other systems mentioned above can.
